Restaurant Week & Beer Can Chicken

So today is the start of restaurant week, which happens twice a year here in Columbus.  I love these weeks for a few reasons 1. it gives me an excuse to eat out, 2. it gives me a reason to try a new place and 3. most of the proceeds go to the mid Ohio food bank!

The only stipluation that I have about RW, is that I cannot go somewhere that I have already eaten, it defeats the purposse in my mind.  I am going to 3 possibly 4 different places this week (thank you to lady who bought jeepy's old summer softtop).  Tonight my friend Loren and I went to Montegomery Inn, which is apparently known for their ribs.  Well I am not a huge rib person so I opted for the salmon, as you can see from the picture - they will not be winning any awards for presentation.  I wasn't impressed with the salmon and had to lather it in BBQ sauce to finish it up!  The broccoli and onion straws were yummy! At least the company was good, so I can't complain about that!  If I were ranking out of 5 stars....this would win about 2.5

Tomorrow night we are trying Caribbean Jerks so I am hopeful that is a better experience!  I will give a ranking and provide some pictures when I get home!

Okay so now to that beer can chicken I was talking about yesterday.  Two weeks ago mom and I attended the roasting a chicken class at WS, and well...I felt really bad for the lady teaching it because well....her chicken after roasting for about an hour came out....RAW.  This of course scared my mom because she cooks damn near everything until the smoke detectors go off!  The fire department loves her because they never have to worry about whether or not the smoke alarms are working!  Knowing that Big Bern (my dad) would love something like this, and that mom could totally recreate it, I wanted to find something try it out and then teach her how to do it.

So I started with about a 4-5 lb bird that I bought at Kroger for $6, then found a recipe that I was going to follow.  Best laid plans right...I pulled chicken little out of the fridge, got her all lathered up with the spice rub and just as I went to get the grill ready to go a damn monsoon hit!  Seeing that CL was going to be partaking in a sauna for close to two hours I opted to look up another recipe that had directions for roasting in the oven.

I preheated the oven and let chicken little baste in her new spicy rub.  Once I heard the "the oven is hot" beep in she went, 350 degrees for an hour and 45 minutes!  The house smelled great, while CL was roasting I used my spiralizer and cranked out some sweet potato pasta.  I sautéed that in some olive oil with half a red onion and some fresh corn off the cob!  Not going to lie that mixture was the shit and so damn easy!

Once "the bird is done" buzzer went off, I stuck the thermometer in her made sure we were going to get poisoned and pulled her out to rest.  Why did she need to rest - the bitch had been in there for over an hour!  Well this is to let the juices flow back in and make sure all the flavors get to their maximum deliciousness!!

What I couldn't figure out how to do at first was to get the piping hot beer can out of her tush!  Quickly I determined that I was going to puncture a hole in the can and let the beer flow!  It was like a river of beer coming out of the can.  Once it slowed down I was able to safely remove the can and start slicing CL.  As you can see from the picture I got a ton of chicken out of that $6 bird.  I totally plan to do this again!

Here is the recipe that I followed for the spice rub and I have already told you the adaptations that I made so that I could roast her inside!

Well worth the wait time!  Happy roasting!
