Random Acts of Kimmie Kindness - August

I think that I may have explained in an earlier post that I started something back in January called Random Acts of Kimmie Kindness.  I actually did this back in 2012 after sending out some random cookie care packages to a few friends and seeing their excitement.  I decided that I would start this back up this year as a way to spread some joy to others even though I wasn't really feeling a ton of joy in my life.

The last two years have been a struggle for me - but with the support of some friends and my amazing family I was able to scrape by at times and shine at others.  One place where I have learned to find some solace is in the kitchen so baking 35 dozen cookies in 7 hours honestly is nothing!  As long as I plan properly I can kick some serious cookie ass!

When I decided to do the R.A.K.K's again I posted to my Facebook page that if you were interested in entering the contest - all you had to do was message me your address - this included close family and friends even if they were addresses I memorized years ago, and people whom I have never actually even met but have become friends with due to different groups I have joined on Facebook.  The only stipulations that come with the package is that you must post a picture on Facebook of your cookies, and let me know which ones are you favorite.  Each package contains approximately 5 dozen different kinds of cookies, and then something that is either specifc to the family/person receiving the box or that will remind them of me!

Sooooo I got up yesterday morning super early, ran to the store and picked up all of the ingredients that I needed.  One of my buddies happened to be running out to Trader Joes on Thursday and asked if I needed anything and the one ingredient that I was going to need to get today she grabbed for me so was able to complete all of the cookies before heading to bed last night!  

I started the cookies around 3 yesterday and finished everything up right before 11.  I did not pack the boxes or write the personal note that goes in each one until today but the hard part was done!  I totally felt accommplished.  It certainly was one of those weeks where I had a lot to do and I have checked all by two things off of my list.  Both of which I should be able to complete before the end of the day tomorrow.

So as you can see from the bags the 5 different types of cookies that I sent out were:
1.  Chocolate chip pudding cookies (I got about 7 dozen out of this recipe)
2.  Triple chocolate cookies (I got close to 9 dozen out of this recipe)
3.  White chocolate cranberry (7 dozen out of this recipe) - the only change I make to this one is to use the Trader Joes Orange ccranberries instead of just regular ones
4.  Chocolate stout with sea salt, pretzels and caramel (I had to double this but got 9 dozen out of it)
This one was a bit of a struggle and not one of my favorites - the stout didn't really reduce down, and I didn't particularly care for the flavor of the first few that came out - so I added the sea salt on to the majority of the cookies after - that seemed to kick things up a notch.  I am hopeful they didn't suck!
5.  State of Ohio Sugar (6 dozen - this one totally depends on the size of your cookie cutter) - this is my mom's sugar cookie reciepe - I will share this one at a later time as an entire post should be dedicated to those bitches!

Anyhow, once I wrote out all the letters I got the boxes all taped up and here they sit ready to be delivered to my favorite post office worker Mary in the morning.  She also gets cookies when I go - most of the time though its a sampler pack of just the extras (2 or 3 of each kind).

I was in the kitchen for a bit today and will have a few new recipes for you this week....  But I hung my apron up about an hour ago and need to hit the hay!  I am exhausted and have a busy week ahead of me!  I hope that you had a great weekend - now get to cookin'
