I never knew this young man, I never saw him pitch, I only know that Buckeye country is very sad. I only know that it is days like today that I wish I lived close enough to give that hug to my nephew or anyone else I love, because tomorrow isn't promised. His family and teammates will be in my thoughts and prayers - rest in peace Zach - I hope you enjoy that pitching mound in the sky kid!
Time for me to wipe my tears and get to cookin'....
This week the recipe of the week was based on my Try the World Box!! I really wanted to make sure that I found a recipe that could use some of the awesomeness in the box, and let others take the journey to Japan with me! Knowing that everyone should be able to get their hands on soba noodles I started there! So the recipe was Japanese beef with soba noodles, and from start to finish it took me about an hour.
Are you ready....lets get going
I have the tendency to love me some mushrooms therefore I decided that I wanted to add these to the recipe before we even got started. I sautéed those up in a little bit of olive oil and then added minced garlic...yum...I could eat just those!
As you can see from the picture I also had the water boiling for the soba noodles then I started pulling out everything else necessary for the recipe - yes that is a giant bottle of soy sauce - bought it at Sams, way cheaper than trying to buy the little jars at the groery store.
Then I got out my trusty peeler (http://www.williams-sonoma.com/products/swissmar-peeler) and spiralizer to get the carrots ready to go...

Look at how funny the carrot came out of the spiralizer - the girls were happy they got to split the little nub!
I learned from last night to make sure that I left the noodles in the cold water until they were ready to go in the broth so here they sit...
Once the noodles were sitting in the water, I used the same pot to get the broth ready to go (trying to limit my clean up tonight)
Do you see the little creeper in the background?? They are not allowed in the kitchen while I am cooking but the little shit doesn't listen very well...if she would just do what her big sister does she wouldn't spend so much of her evening in timeout! Note Halie is technically not in the kitchen but this is how she sits and stares at me while I am cooking!
Now that the broth is coming up to a boil, and the shrooms and carrots are ready to go its time to slice that beef. I have never actually put beef in a broth like this before so I was a little on the scared side as the recipe said that it was going to cook in 3 minutes - what is this ramen noodles?? But I was going to follow the instructions...cut beef super thin, against the grain removing fat...so I pulled out Eva (my favorite chef's knife) and got to work!
The strips reminded me of what you would get in a fajita - skinny and thin...once they were all cut up I tossed them in the broth and set the timer.
To my utter surprise the shit was cooked in 3 minutes - did't seem tough or anything at this point, tomorrows leftovers may tell a ddifferent tale. I pulled it off the heat, added some finely diced jalapeño because who doesn't like a little spice, then I added the other veggies to the broth. Once all of those were in there, I drained the noodles one more time and dumped them in.
Now here is where I could have or should have done things differently. If I were serving this to others I should have put the noodles in the serving dishes then poured the broth over the top - this would have allowed for everything in the broth to end up on the noodles. Or I could have put the noodles in the broth first and then added the veggies. Either way I think that my veggie to beef to noodle ratio would have been a little better had I done that!
Here was my final product - oh and I did add some of the wasabi drizzle (from last night) over the top mainly becuase well....I LOVE SPICE!
One of the other girls in the recipe of the week club also made it already this week and here was her final product - the only change she made was to half the amount of noodles used!
She even had a little taste tester who enjoyed every bite - haha look at those soba noodles on her face!
So my changes were that I added sautéed mushrooms, a finely diced jalapeño and I actually used 4 cups of the broth because well...once I added the mushroom and stuff it just seemed like it needed a little more liquid - and I didn't want the broth to go to waste in my fridge! lol
Here is the original recipe:
Ok much like last night I still have to clean up the dinner dishes....so I had better get my happy ass in gear. We are off to the fair tomorrow night so nothing coming out of the kitchen... though I am sure I will find something delicious probably on a stick that I will have to report back on!
Until then....Happy Cookin'
