Sticking with my Mexican themed week I found this recipe this weekend and thought - well I am making all of that avocado salsa I may as well see how it tastes on tofu!! I have baked, pan seared and grilled the fu - so now it was time to add just a little more oil to the pan and make it extra crispy for the tacos!
Are you ready lets get going....
First things first lets get the fu out of the fridge cut it up and get some of that extra water off of it... much like the last tofu recipe I put it on some paper towel, then put more paper towel over it with a heavy plate over top to squeeze out the water. I then went out and mowed the grass - so I let it stand for about 45 minutes this way.
Once I was done outside, I came back in and got the marinade/coating ready... this was a honey and Sriracha mix - I worked in batches so that every piece was coated - the original post said put them in and lightly shake - ya that wasn't going to work for me as HONEY IS STICKY so nothing was moving when i shook it!!!! I used my fingers and coated each piece - just remember to wash your hands thoroughly because Sriracha is SPICEY!!
Then I continued working in batches and put the tofu in the cornmeal mixture...coating each piece on all sides
Then in the already hot pan (working over a medium heat) I put the tofu into about two tablespoons of olive oil - recipe called for a 1/4 cup of oil - way too much grease for me so I decreased this - which is probably what caused my tofu to get a little darker than they probably should have been but I will take it over the grease!
I let the tofu sear for about 4 minutes on each side, and while that was going I cut up all my veggies that I wanted to use on the tacos and started getting my shells ready
I bought these shells at Trader Joes and they are a corn wheat shell - interesting texture - not 100% sure I would buy them again, but they did the job! Using my trusty olive oil sprayer I sprayed the shell and put it in my small sauté pan to let it crisp up a touch!
Here is what the tofu looked like coming out of the pan - again a little darker than I would have liked but this was the first time trying this so it was bound to need some changes! And as Carla Hall would say there is FLAVA in the BROWN! haha!
I loved how cripsy the cornmeal made this - I mean there was a serious crunch to these bad boys! Totally a different texture for me with the fu! I think that the only thing that I would do differently with the cornmeal mixture would be to add a little more seasoning to it. Now that I know what it will do I will totally add some different things to it!
Its time to start plating these things - step 1 - spread some refried black beans on the bottom of the shell, then some lettuce, and red onion! The lettuce and red onions were again from the farmers market this weekend YAY FARMERS!!!
Now lets add the tofu and tomato - I did things in stages so the tofu stayed crisp!
And finally my kick ass (yes I am patting myself on the shoulder for this one) avocado salsa! I haven't met someone yet that hasn't raved about this so I think its warranted! haha
DIG IN - it was delish - the only thing that I might do differently next time would be to see if I cut the tofu even smaller if that would make it easier to eat in the taco form. Besides that I would have liked some fresh cilantro to top it off with- but I used up all that I picked up at the farmers market in the salsa! :( And with the Mexican cilantro poop scare I am trying to avoid picking it up at Kroger!

Speaking of Kroger - I had to stop there on my way home from work today and well...I decided that it would be awesome if I used my Starbucks treat receipt that I had from this morning - COFFEE at 5pm = Jackson 5 dance party while doing dishes with the dogs! Good thing there is not a hidden camera in my kitchen or you would all be in for a treat because my dancing skills are much like the peanuts characters! My sister got the rhythm I unfortunately did not!
Oh and the first Random Act of Kimmie Kindness package arrived at its destination today....here is the lucky winner - my friend Heather! She lives right here in Columbus so that is why hers arrived today - the rest should hit their new homes by Thursday!
